Love em or Hate em
I grew up having nightmares about them.
My dad used to pile a mountain size portion on my plate and would not let me leave the table until I ate them. It certainly was child abuse.
The dreaded beet. I hated the the smell and taste of those rotten squishy roots.
Fast forward to 2013 to when my world changed in a phone call. Two words from the biopsy...It's Cancer.
From that moment I was in fricking fight mode and changing my diet was top of the list. I had always ate healthy, but now I had to look at healing foods.
I researched and purchased all the fruits and veggies available in my city and shipped in the others.
Beets were on the list. Having cancer was the only thing that was going to get me to eat beets as an adult.
When they first entered my kitchen, my first thought (and the most natural) was to hide them in a napkin. Instead, I placed them in my salad bowl, promising myself that this would cure me.
Today beets are part of my life due to the fact that they are rich in folate which helps healthy cells to grow and function, among many other health benefits.
I wish that I could say that I've grown to love the taste, but I have grown older and that was the goal!
